Castle Rock Has Spirit

Our exclusive Edinburgh castle gin continues to flourish. We have bottled nearly 1000 years of history and are delighted with our first ever Edinburgh Castle Gin. Inspired by the castle’s spring city landscape, with gorse rising up from Castle Rock, the vibrant yellow petals are used as one of the predominant botanicals and are distilled with yuzu, pink pepper and pink grapefruit in this small batched gin, made in partnership with the multi-award-winning local Scottish distiller Edinburgh Gin.

The Crown Jewel

Edinburgh Castle Gin and The Crown Jewel cocktail

Ingredients:

50ml Edinburgh Castle Gin 

25ml Cointreau

25ml grapefruit juice

2 bar spoons of slight lavender infused sugar syrup

1 egg white

Method:

Dry shake all ingredients together, then shake with ice and double strain into a coupette. Garnish with handpicked heather (if possible from the castle hill) snibbed to the side.

Hint: If you don’t have sugar syrup, you can make it at home! All you need is 300grams of caster sugar and 150ml of water. Gather your ingredients and bring the water to boil in a pan. Dissolve the sugar in the water, stirring constantly over a low heat. Once the sugar is completely dissolved allow to simmer for 10-15 minutes. Remove the pan from the heat, allow to cool and thicken, then add to a container. You can now enjoy using it in your Edinburgh Castle Gin cocktails!

On The Rocks With A Twist

Edinburgh Castle Gin and On the Rocks with a Twist cocktail

Ingredients:

3 blades of tarragon

1 bar spoon brown sugar 

50ml Edinburgh Castle Gin

50ml yuzu juice 

Mediterranean tonic water 

Method:

Muddle the tarragon and sugar, add gin and yuzu in a glass. Stir to mix. Top with ice and tonic.

Garnish with fresh grapefruit twist and tarragon leaf.
